Information about Indian Rice Factory

One afternoon in 1967, Amar Patel, a young registered nurse in Toronto from Bombay, was having lunch at Inn on the Park. The hotels' restaurant was famous for sophisticated French cuisine, but it was the buffet of the day that had aroused Mrs. Patel's curiosity - a culinary event titled "FROM THE CHAFING DISHES OF INDIA". In those dishes were examples of the travesty of Moghlai cooking that even finest European chefs were trained to prepare - chicken, shrimp or beef in a sort of bechamel coloured with curry powder. Mrs. Patel called the manager and gently tried to explain that this was scarcely authentic. When the conversation moved into the kitchen, the executive chef listened politely and then invited her to cook him a meal. She obliged, he was stunned. George Brown instructor Jacques Marie, recalls "Mrs. Patel showed me what curry is really about. It was a new world to me".

To the kitchen's eternal credit, Mrs. Patel was hired to teach the team all that she knew. After a year, she moved on, first to Julie's mansion on Jarvis working her magic in its upstairs room, the Bombay Bicycle Club, and then to Hyatt Regency (now Four Season's in Yorkville).

In 1970, she opened her new place on Dupont St. , Indian Rice Factory, a tiny place with an avant garde open kitchen and a blackboard menu that changed every week or two. The Factory is still with us, in larger, less impromptu premises and Mrs. Patel is still cooking. Her menu combines traditional Indian cuisine with a flare. The most popular dishes on the menu include butter chicken and fiery hot vindaloo curries. And how can we not mention rice at Indian Rice Factory! Mrs. Patel is known for her flavourful and fragrant biryanis and rice pilao dishes. Recently, Mrs. Patel has appeared as a guest chef on the Christine Cushing show preparing shrimp biryani and she's also appeared on the Canadian Living Show.

Mrs. Patel continues to contribute to the restaurant industry by also teaching at the renowned Stratford Chef School. She is a well known chef amongst the top echelon of chefs in Toronto that she receives continuous phone calls for hints and tips on preparing her flavourful curries.

Mrs. Patel is extremely pleased to be a part of the (Summerliscious program) once again or (Toronto Street Festival) for the City of Toronto and is looking forward to introducing her creative cooking dishes to new and existing clients.
